So, the other night, I found myself in a quandary.
It was suppertime, and I had NO MEAT thawed to eat. Nothing! The only thing I could do was try to cook some frozen ground beef (the fastest thing I had available to cook) - and quickly try to figure out what else we could have with it.

Being on a special diet or healing protocol pretty much means any kind of fried potato chips (other than homemade) are out the window. (Especially on the GAPS diet protocol - no potatoes are allowed at all.)
This is not really a bad thing. I've been reading lately about the levels of acrylamide in commercial potato chips and french fries, and it's a little alarming.

One of my favorite snacks has always been sour gummy straws. You know, those sticky, mouth-puckering, strawberry-flavored straws coated in citric acid? The really healthy ones?

So, pumpkin seeds have been our thing as of late.
I haven't wanted to try giving the kids almonds. I actually did give them a bite of homemade almond bread during the early part of the GAPS Intro Diet, but wasn't brave enough to give it twice.
But pumpkin seeds, I could do.

This recipe - more like a technique, really - has really been a lifesaver these past few months! It is one of the simplest dishes I know how to make, and for those who like making the most of the food they purchase, this dish is a winner - the only parts left are the bones - and those can be easily dumped into a pot for bone broth! I'll write more about bone broth later, but for now, here's our family's creamy chicken.

Back at the beginning of the year, one of my biggest goals was to quit complaining. Now, I realize some don't like to do New Year's goals, and that's fine! It's been 5 months since we began the GAPS Diet. I still can't decide if that is - no, wait. Yes, it does feel like a long time. It feels like an eternity! But be that as it may, it's time for a little GAPS update.
