- 1 ripe banana
- 3 eggs
- 1/4 cup coconut flour – you can also usually find this for a good price at Costco or Sam’s
- 2 tablespoons coconut milk – learn how to make your own coconut milk here
- 1 tablespoon Collagen Hydrolysate – this is gelatin powder and this is the brand I use – you can use either the gelatin or the collagen powder
- 1 tablespoon coconut oil – I get this brand from Costco
- 1 teaspoon baking powder – this is the brand I use, see note if substituting with baking soda
- extra coconut oil for greasing pan/griddle
Instructions
- Simply mix all ingredients together in a medium-sized bowl using a whisk. Mix well, do not over mix.
- Add the extra coconut oil to your pan or griddle and cook on low-medium heat.
- Flip when the pancakes have risen and are bubbly.
- Continue cooking through until done.
Notes
- Makes about six to eight 4″ pancakes
- If you are using baking soda instead of baking powder, then you’ll need to add an acid to the mix. Add a teaspoon of apple cider vinegar to the coconut milk and let sit for a few minutes before adding the coconut milk to your batter.
