I have to Keep it Simple
Let me step back and explain a few things. . . Like every mom, my days are pretty full. I absolutely admire mamas who can churn out exotic fare most nights at dinnertime. They amaze me… somewhat like a mythical creature. Maybe when things slow down one day (?) in the future, I will have more time to experiment. I think it’s so beneficial.
I, however, tend to stick to recipes that are quick and easy – while still aiming for tasting great to our family (sort of). This might sound a little unbelievable to some who have been in the kitchen many years, but it wasn’t until a year or two ago that I ever prepared fresh green beans, as in, not from a can. I honestly never considered buying green beans from the produce section! I may have even thought their default state was in fact, from a can.
It’s a good thing people can change, right? Let me ask you – are you more comfortable with buying canned green beans? I want to encourage you next time you see them in the produce section – grab a pound to cook that night! Then race to this post 😉 for a quick and easy way to prepare them. The flavor will knock your socks off.
It’s so easy, even I can do it. 🙂 Here’s the recipe:
Simple, Delicious Green Beans
Ingredients:
- one pound fresh green beans
- 2 tablespoons bacon grease – remember, traditional fats are your friend! Stay away from vegetable oils and hydrogenated oils! (Learn how to strain your bacon grease here.)
- 1 clove of garlic, minced, or the equivalent of garlic powder (where to buy garlic powder)
- 1/2 teaspoon sea salt – adjust to your preference (where to buy sea salt)
- 1/2 teaspoon pepper – adjust to your preference (where to buy pepper)
Instructions:
Combine all ingredients in large saucepan.
Sauté over low-medium heat, uncovered, until cooked through – about ten minutes, depending on your cooking temperature. Be sure to stir often so they don’t stick and burn!

Hey, hey!
We are having a fabulous time in Grand Cayman this week, AND just this a.m. we stopped at a roadside stand and bought fresh, island grown GREEN BEANS, bananas, star fruit and plantain.
Tonight I am cooking the green beans sans bacon fat and garlic ’cause I only have water, salt and pepper – with some jalapeno Tabasco alongside. It will be delicious!

Green beans and bacon drippings have always been a family fav for generations I haven’t made them with garlic before and will try it sometime. I too have usually made g. beans from a can. I recall my g.ma’s fresh g. beans from her HUGE garden. Always a hit! Thanks for the good memory!
