My parents always get us the neatest Christmas presents. I think it’s a gift of theirs to give great gifts. Say that fast five times. One of my favorites was the Backnobber – this hard molded plastic thing that works the knots out of your back, neck, and shoulders. Highly recommended for those with tight muscles.
ANYway, this year’s gift was pretty cool too. They got us a slow cooker casserole dish. Have you ever seen one of these? I never had. Maybe they’ve been around forever and it’s nothing new, but it was new to me.
Then it hit me: I never make casseroles. I don’t know of one casserole dish I can make. Plus, I was trying to get back to a more paleo/grain-free lifestyle and was at a loss for paleo casserole recipes. (If you have any great ones that I haven’t shared here, please share them in the comments section.)

So cool that you have one, Jill! Hopefully some of these recipes will work for you. I have actually noticed that it takes mine a little longer than than the recipe states, but I feel like I need to get more familiar with using it to get a better idea.
